Cookies. For breakfast. So good. And healthy. Wait? What! Is that even possible? I am here to say it is, my fellow cookie lovers, it is possible. Blueberry Breakfast Cookies with Dark Chocolate!
We have all heard that breakfast is the most important meal of the day right? In my opinion breakfast is awesome because 1. You get to drink coffee, 2. It’s an excuse to eat something sweet, 3. You get to eat it in your PJs or in bed. Ok maybe eating breakfast in bed hasn’t really happened in forever due to baby, but if it did, it would be awesome!
My ideal breakfast is sweet but not terrible for you, filling but light, easy to eat and easy to make. These days anything that is somewhat simple, healthy and portable is also a huge plus when I am trying to make lunch for the hubs and feed Poppy at 6am.
According to the hubs, this is not technically a cookie. But I wholeheartedly disagree. To him, a cookie is basically a chocolate chip cookie. So yes this is not a chocolate chip cookie. This is more like if a cookie married a muffin. And they made a baby AKA a Blueberry Breakfast Cookie with Dark Chocolate.
Maybe a baby metaphor is not the most appetizing so disregard. Anyway…. These cookies are FAB to the FABULOUS.
Where to start. They are easy. Um duh… awesome! They are packed with antioxidants. Blueberries baby. Side note- beware when you feeds these to little kiddos because mine likes to eat big bites, get blueberry all over her lips and then rub her little face all over our white couch or grey carpet.
Next up, these cookies are filling. One would not think a single cookie could fill you up, but trust me they really do. If I am really hungry I will eat 2, otherwise, 1 is actually enough. And I cannot say the same for any other cookie I eat. These are healthy. They have so much good stuff. Oats, flax, coconut oil, blueberries, dark chocolate.. I mean not eating them is a detriment to your health.
Last but not least, they have a little dark unsweetened chocolate. Chocolate for breakfast. No explanation needed here.
Two important things to add: these are baby friendly. Poppy loves these! It’s the closest thing to a cookie she has ever has and man does she love them. What I sometimes do when I make a big batch of this, is separate a bit of the dough out before adding the chocolate. Then I omit the chocolate for her cookies. This way baby cookies will be chocolate free since I do not feel like she really needs chocolate quiet yet.
Also I want to report that even my cookie snob husband liked them. Boom. What now. Woot woot!
