The best and easiest banana bread there is! Made with wholesome ingredients in 1 bowl! What could be better than this One Bowl Banana Bread?
Mmm, Banana Bread, an oldie but a goodie. Imagine walking on a lazy Sunday morning to the smell of warm banana bread and coffee…. Enough said! This is one of those timeless comfort foods in my book that is delicious year around on happy days or days where I need a little pick-me-up. Luckily it’s also one of those recipes that is super easy to put together, clean up and with a little patience you can eat it fresh out of the oven (unless you eat a quarter of the batter like some people do, ahem).
My mom has been making banana bread for a long time. It is a great way to use up old ripe bananas and also to get your daily serving of fruit, right? Sure lets go with that. I have tried many recipes over the years and have to say this is the best and also simplest I have tried. Hats off to Simplyrecipes.com, this banana bread is simplicity at its best… “simply the best, better than all the rest.” A recipe so easy you only need one bowl, a spatula, a little elbow grease and no mixer.
If you are like me, and somehow always have ripe bananas (how do they ripen so quickly!) Then you are forced to make banana bread a lot. What a sacrifice. However don’t fret, if you are one of the lucky ones that has beautifully shiny new yellow bananas (perfect to eat but not to bake) and want to make this recipe, just toss them in a paper bag, seal’em up and wait until they ripen. If you need a quicker solution, try this: throw them on a cookie sheet peel and all, at a temp of 250F for 15 minutes. Warning: this will turn the peel an unappetizing black color, but you are left with a sweet mushy banana perfect for this recipe.
Yields 1 loaf
Ingredients
- 2-3 ripe bananas, peeled
- 1/3 cup melted butter
- 1/2 cup of sugar (original recipes calls for 1 cup, but I prefer the sweetness to come from the ripe bananas. Add more if desired)
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon cinnamon (optional)
- Pinch of salt
- 1 1/2 cup of all- purpose flour
Instructions
- Preheat the oven at 350F, and butter a 4x8 inch loaf pan.
- Next, choose 1 large mixing bowl where the entire recipe will take place. Mash the ripe bananas until smooth. Stir the melted butter int the mashed bananas.
- Add in the baking soda and pinch of salt. Stir in the sugar, beaten egg and vanilla extract. Once combined, the last step is to mix in the flour. Try not to over mix but make sure the ingredients are all mixed together.
- Pour into the buttered loaf pan and back for 50min. Note the time can range from 50min to 1 hour so please check that a toothpick or skewer stick comes out clean when inserted in the center of the bread.
- Lastly remove from the oven and let cool in the pan for a few minutes before placing it on a wire rack. Slice it up and enjoy it warm with some butter, honey and perhaps an nice mug of coffee.

Banana bread makes an excellent gift too! I have made them in a mini loaf pan and they are great for Christmas take home treats, house warming presents and a gift for kind neighbors/coworkers.
