Happy first day of SPRING! That’s right, March 20th is the first day of spring! Woohoo! Bring on the flowers, plants, chirping birds and warmer temperatures.
In Minnesota spring doesn’t normally start until late April/early May, but I’m in denial 😉 Instead I’m going to live life like its spring time starting today!
And spring means, spring produce! Freshness, color, flavor.
I’m bringing spring home through these 13 fabulously springy recipes. All are easy and healthy. And DELICIOUS of course! Let’s all celebrate the arrival of springtime with some good food.
Breakfast
1.Easy Breakfast Burritos or this Make-Ahead Freezer Friendly version
Lately all I want is savory breakfasts (pregnancy cravings going crazy!) And these breakfast burritos are easy, wholesome and totally satisfying.
2. Wholegrain Strawberry Breakfast Cake
Versatile and absolutely lovely with coffee. This is a feel good way to eat cake for breakfast.
The title says it all. These carrot, zucchini and pineapple studded beauties are an ideal breakfast on-the-go and for your hungry little ones.
Lunch
I am a total sucker for Panzanella salads! Salad + Bread = Yes Please. This Spring Panzanella is even more lovable with the fresh taste of spring veggies.
5. Napa Cabbage Salad with Buttermilk Dressing

How can you not want to eat this cheesy plate of goodness!? Good thing it’s technically healthy with lots of spinach.

One of my all time favorite spring desserts! The burst of citrus mixed with a heavenly coconut, date and graham crust.
Total comfort food at it’s best and the fab way to eat fruit in my opinion… sitting on a bed of caramel over a light and fluffy cake.
